Maple Pecan Ice Cream Sammies

Ingredients:

  • 2 & 1/3 cup all purpose flour

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1/2 cup unsalted butter

  • 1 cup packed dark brown sugar

  • 1 egg

  • 1/3 cup big sis cardamom maple syrup

  • 1 tsp vanilla extract

  • 1 cup chopped pecans

  • 1 pint ice cream of choice

Directions:

whisk flour, baking soda and salt in bowl. cream butter and brown sugar using hand or stand mixer. add egg, maple syrup, vanilla extract and cardamom maple syrup. beat until combined. add dry ingredients and mix until combined. fold in pecans. cover and chill dough for 2hrs. preheat oven to 350°F. line baking sheets with parchment paper. roll dough into balls 2tbs each. bake for 12-13 mins. cool completely. smush 2 scoops ice cream between cookies and freeze for 1 hr before serving
