crispy salmon bowls

Ingredients:

  • 1/4 cup soy sauce

  • 2 tsp fish sauce

  • 3 tbs big sis jasmine hot honey

  • 1 tbs fresh grated ginger

  • 2 tbs chili paste

  • 4 salmon filets (cut into chunks)

  • 4 tbs salted butter

  • 6 garlic cloves

  • 3-4 cups cooked rice

salsa:

  • 1 cup diced mango + 1 diced peach + 1 diced jalapeno (minus seeds) + 1/4 cup chopped cilantro + 1/2 diced red pepper + 2 tbs lime juice

Directions:

combine soy sauce, fish sauce, big sis jasmine hot honey, ginger and chili paste in bowl. melt butter in skillet over medium-high heat. add cubed salmon skin side down and cook for 3 minutes until crisp. flip salmon, reduce heat to medium and add garlic. cook one minute. pour in sauce and cook 3 minutes until sauce thickens. remove salmon cubes. add 1/4 cup water and bring sauce to simmer until thick. combine all salsa ingredients in bowl and season with salt. spoon salmon over cooked rice and pour over sauce. top with salsa!
