big sis granola
Ingredients:
4 cups rolled or old fashioned oats
1.5 cups raw nuts or seeds (pecans, pumpkin seeds, walnuts, chia seeds, flaxseed)
1 tsp salt (sea salt or kosher)
1/2 tsp cinnamon
1/2 cup olive oil or melted coconut oil
1/2 cup big sis maple syrup or honey of choice
1 tsp vanilla extract
2/3 cup dried fruit and/or coconut shavings
Directions:
preheat oven to 350. line a rimmed baking sheet with parchment paper. combine oats, cinnamon, nuts, seeds and salt in mixing bowl. combine oil, vanilla extract and big sis syrup of choice in small bowl. add wet mixture to dry and stir to coat all wet ingredients. spread in thin layer on parchment paper and bake in oven for 12 minutes. remove from oven and mix. pat down again in even layer and put in oven for another 10-12 minutes. remove from oven and let cool for 45 mins before mixing. break up granola into large and small chunks, adding dried fruits and coconut shavings if desired. store in airtight container for 2 weeks! enjoy with plain yogurt, fruit & more big sis syrup!
